After 18 years in the industry, and having worked in some of the world best hotels and restaurants, Masterchef The Professionals finalist and runner-up Dan Graham found himself being drawn to Yorkshire in 2013. He has worked in some of the UK’s best restaurants including the 2 Michelin Star Le Gavroche and now runs ‘At the Dinner Party’ where you can have restaurant quality food in your Yorkshire Holiday Cottage or home.
He’s chatted to Gorgeous Cottages about what drew him to Yorkshire and his favourite Yorkshire recipes and ingredients!
What made you choose Yorkshire
“Having just spent 5 years living and working in London I felt the need to put down some roots on a more permanent basis. After a lot of research, I found that outside of London, it was Yorkshire that had the best food scene.
Every time I would go to the food markets in London I’d hear the stall holders shouting come and get your Yorkshire strawberries, fresh crab landed in Whitby that morning or lamb from the Yorkshire Dales. It just felt like the right thing to do, to move to this amazing place where all the produce was from. It’s a chef’s dream.
What are your favourite Yorkshire ingredients?
“This is an easy one, my two absolute favourites are CRAB and SWEETCORN, not only are they amazing ingredients on their own, they also work together in such beautiful harmony. Although these products are available all year round on our supermarket shelves, they are at their best and most importantly they are from Yorkshire in the months of July, August and September, this is when they are at the ideal size and at their sweetest.”
Whitby Crab with Yorkshire Sweetcorn Soup
One of Dan’s most popular dishes – Whitby crab with Yorkshire sweetcorn soup showcases both of these delicious Yorkshire ingredient and you can download the recipe here and give it a go yourself. Happy Cooking!
Alternatively (and this definitely sounds the best option to me), book Dan to cook at your Yorkshire Holiday Cottage and he will make it for you!
How about your favourite Yorkshire product?
“My wife is a Yorkshire lass and about 8 years ago I went to my parents in law house on boxing day for my Christmas dinner. After we had stuffed ourselves with turkey my mother in law put a cheeseboard on the table and a plateful of what I thought was ginger cake.
I asked what the cake was and why on earth are you serving it with the cheeseboard, obviously I now know it’s Yorkshire Parkin and the Wensleydale Cheese is traditional. I loved it and now features on my tasting menus as the cheese course. You can the traditional Yorkshire Parkin recipe here.”
